Position Overview

As a Junior Kitchen Assistant, you will play a vital role in ensuring the smooth operation of our culinary department at Accor. Your responsibilities will encompass a variety of tasks aimed at maintaining high standards of food preparation and service.

Key Responsibilities
  • Operational Excellence: Uphold the performance standards outlined in the Departmental Operations Manual to guarantee efficient departmental operations in alignment with hotel policies.
  • Station Preparation: Ensure that your station is set up correctly and punctually for each service period.
  • Supportive Role: Assist the Demi Chef de Partie or Commis 1 in daily kitchen operations and tasks.
  • Food Preparation: Prepare daily mis-en-place and food production in your designated section, adhering to recipes and quality standards.
  • Cooking Standards: Prepare and cook food according to established recipes, quality benchmarks, and presentation guidelines, prioritizing key items.
  • Temperature Control: Regularly check and confirm the accuracy of appliance and food temperatures.
  • Post-Service Duties: After service, ensure that oven tops, work areas, and surfaces are switched off and cleaned thoroughly.
  • Guest Satisfaction: Strive to meet and exceed guest expectations by consistently delivering high-quality food preparation and presentation.
  • Outlet Identity: Contribute to establishing the outlet's identity by adhering to the required food presentation standards.
  • Recipe Knowledge: Familiarize yourself with preparation methods and standard recipes for all menu items in your kitchen, following procedures diligently.
  • Cleanliness Standards: Maintain and clean all work areas, kitchen equipment, and utensils to meet the hotel's high cleanliness and hygiene standards.
  • Team Coordination: Collaborate with colleagues to address operational challenges as needed.
  • Equipment Proficiency: Be knowledgeable about the operational procedures of all kitchen equipment and use them correctly to ensure maximum efficiency and safety.
  • Food Safety Compliance: Assist in implementing food safety and hygiene standards, including HACCP and municipal regulations.
  • Continuous Improvement: Participate in regular meetings and briefings as scheduled, and engage in training programs aimed at enhancing personal and departmental standards.
  • Adaptability: Remain flexible and willing to rotate among different outlets within the Kitchen Department.
