Job Summary:

We are seeking a highly motivated and organized Commis 1 2 to join our culinary team at Accor. As a key member of our kitchen team, you will be responsible for supporting the Chef de Partie in the preparation and presentation of high-quality dishes.

Key Responsibilities:

  • Mise-en-Place and Food Storage: Organize and maintain the mise-en-place and food storage areas to ensure efficient and safe food preparation.
  • Order Taking and Execution: Take orders from the Chef de Partie and execute them in a timely and accurate manner.
  • Daily Checklist and Requisitions: Complete the daily checklist and requisition forms for food, dry stores, and kitchen transfers.
  • Wine and Dry Store Management: Manage the wine and dry store inventory and ensure that stock levels are maintained.
  • Team Motivation and Communication: Maintain good relationships with colleagues and motivate team members to achieve high standards.
  • Portion Control and Quality: Ensure that portion sizes, quantities, and quality meet the specifications set by the Chef de Partie.
  • Meetings and Communication: Attend daily meetings with the Chef de Partie and other relevant meetings as required.
  • Problem Solving and Reporting: Report any equipment failures or maintenance issues to the Chef de Partie and ensure that necessary work is carried out.
  • Shift Handovers: Pass on information to the next shift about functions and tasks.
  • Hygiene and HACCP: Maintain high standards of hygiene and HACCP compliance in accordance with regulations.

Requirements:

  • Culinary Qualifications: Completed kitchen apprentice or chef training courses for at least one year.
  • Experience: At least 2 or 3 years of experience in a five-star international chain hotel.
  • Cooking Skills: Good knowledge of cooking and ability to read recipes.
  • Communication Skills: Excellent communication skills and ability to work effectively in a team.
