Job Summary: The Development Chef is responsible for creating and innovating new recipes, menus, and food concepts for a variety of culinary projects. This role involves conducting research, experimenting with ingredients, and designing dishes that meet the company's standards while satisfying customer preferences. The Development Chef at Leens/The surf cafe works closely with cross-functional teams, including marketing, operations, and procurement, to ensure successful implementation and commercialization of new culinary creations. He is hands on and present when needed, do it today and not tomorrow is the motto

Experience in Modern cuisine, Nikkei and Asian is required. Creativity and passion to learn is key. NO EGO but team player

Key Responsibilities:
Recipe Development: Develop innovative and appealing recipes that align with the company's culinary vision and target audience preferences. This includes creating new dishes, modifying existing recipes, and adapting international cuisines to suit local tastes.

Menu Planning: Collaborate with the culinary team to design and curate menus for various outlets, including restaurants, cafes, catering events, and product lines. Ensure menus are balanced, diverse, and aligned with current food trends.

Culinary Research: Stay updated with the latest food trends, ingredient advancements, and culinary techniques. Conduct market research and competitor analysis to identify gaps and opportunities for menu innovation.

Ingredient Sourcing and Evaluation: Source high-quality ingredients and evaluate their suitability for specific culinary projects. Collaborate with procurement teams to establish relationships with suppliers and ensure consistent availability of ingredients.

Culinary Testing and Refinement: Conduct extensive testing and experimentation to perfect recipes, considering factors such as taste, texture, presentation, and cost-effectiveness. Collect and analyse feedback from various stakeholders and make necessary adjustments.

Cross-functional Collaboration: Work closely with marketing teams to develop promotional materials, including food photography, menu descriptions, and marketing campaigns. Collaborate with operations teams to ensure efficient implementation of new recipes and menus.

Training and Support: Provide culinary training and support to kitchen staff, ensuring proper execution of new recipes and maintaining consistency across multiple locations. Develop standard operating procedures (SOPs) and conduct training sessions to ensure adherence to food safety and quality standards.

Food Cost Management: Work in collaboration with the owner, the finance and operations teams to manage food costs without compromising quality. Optimize ingredient usage and portion sizes to improve profitability while maintaining customer satisfaction.

Quality Control: Establish and maintain quality standards for all culinary creations. Conduct regular audits to ensure compliance with food safety regulations, consistency in taste and presentation, and overall customer satisfaction. Train the team and ensure CONSISTENCY is achieved.

Work Location: Where required with the outlets and in charge of one

Qualifications and Skills:

- Culinary degree or equivalent professional experience in a culinary field.
- Proven experience as a Development Chef or similar role in a culinary or hospitality industry.
- Strong knowledge of culinary techniques, flavour profiles, and food trends.
- Creative mindset with the ability to think outside the box and develop innovative culinary concepts.
- Excellent palate and ability to balance flavours effectively.
- Strong organizational and project management skills.
- Effective communication and collaboration skills to work with cross-functional teams.
- Attention to detail and commitment to quality.
- Ability to thrive in a fast-paced, deadline-driven environment.
- Knowledge of food safety and sanitation regulations.

**Salary**: AED15,000.00 - AED23,000.00 per month

Ability to commute/relocate:

- Dubai: Reliably commute or planning to relocate before starting work (required)
