  • Prepares and cooks foods of alltypes, either on a regular basis or for special guests orfunctions.
  • Assists in determining how foodshould be presented and creates decorative fooddisplays.
  • Maintains purchasing, receiving andfood storage standards.
  • Recognizes superiorquality products, presentations andflavour.
  • Follows proper handling and righttemperature of all food products.
  • Checks thequality of raw and cooked food products to ensure that standardsare met.
  • Leads shifts while personallypreparing food items and executing requests based on requiredspecifications.
  • To ensure that the kitchen runsat an acceptable food cost.
  • To ensure thatambassador productivity is maximized and payroll costsminimized.
  • To work with the Chef de Cuisine insetting each outlet menu and recipes for each meal period in orderto ensure accuracy.
  • To ensure that all outletkitchens adhere to Company and Hotel Policies and Procedures andall Standards.
  • To prepare and update therelevant section of the Departmental OperationsManuals.
  • To work with Chefs de Partie to takecorrective action where appropriate.
  • Toco-ordinate with the Stewarding in regards to the requirements forthe Kitchens.
  • Must be an example of the SofitelValues, Brand Standards, and a champion of appearance and hygieneguidelines.
  • Implements guidelines, policies andprocedures for those operating departments according to SofitelGuidelines & Standards.
  • Must apply theSofitel Food & Beverage rituals.
  • Tokeep the Chefs de Partie up to date with seasonally availablemeats, fish and produce on the local market.
  • Toassist in the development of product specifications for allmenus.
  • To encourage Chefs de Partie to beinnovative and creative.
  • To ensure that productconsistency in quality, appearance andtaste.
  • To assist Outlet Managers in maintaininga high quality operation in service andcleanliness.
