Executive Sous Chef

We are seeking a highly skilled and experienced Executive Sous Chef to join our team at Hilton Hotels. As a key member of our culinary team, you will be responsible for contributing to menu creation, managing and training the kitchen brigade, and ensuring consistency in quality of dishes.

Key Responsibilities:
  • Menu Creation: Collaborate with the Head Chef to develop and implement new menu ideas that meet the highest standards of quality and presentation.
  • Kitchen Management: Supervise and train the kitchen team to ensure a well-organized and motivated workforce, with a focus on efficiency and productivity.
  • Quality Control: Conduct regular quality checks to ensure that all dishes meet the required standards, and implement corrective actions as necessary.
  • Customer Service: Assist the Head Chef in managing customer relations, responding to feedback, and resolving any issues that may arise.
  • Resource Management: Effectively manage working rotas to ensure that resources are allocated efficiently and that the kitchen is running smoothly.
  • Training and Development: Support the training and assessment of team members to ensure that they have the skills and knowledge required to perform their roles effectively.
  • Food Cost Control: Monitor and control food costs to contribute to Food and Beverage revenue, while maintaining the highest standards of quality and presentation.
  • Compliance: Ensure compliance with food hygiene and Health and Safety standards, and maintain accurate records of all inspections and audits.

What We're Looking For:

  • Experience: A strong Junior Sous Chef or previous Sous Chef experience is essential for this role.
  • Creativity: We're looking for someone who approaches food in a creative way, with a passion for innovation and experimentation.
  • Leadership: Strong supervisory skills are required to lead and motivate the kitchen team, with a focus on developing and implementing effective strategies for success.
  • Communication: Excellent communication skills are essential for this role, with the ability to work effectively with colleagues, management, and customers.
  • Customer Service: A commitment to delivering a high level of customer service is essential, with a focus on ensuring that every guest has a positive experience.
  • Grooming Standards: Excellent grooming standards are required, with a focus on maintaining a professional and polished appearance at all times.
  • Planning and Organization: Excellent planning and organizing skills are essential for this role, with the ability to prioritize tasks, manage time, and meet deadlines.
