**Job Title: Chef de Partie (CDP) - Seafood Specialist**

**Job Overview**:
**Responsibilities**:

- **Seafood Preparation and Cooking**:

- Prepare and cook a variety of seafood dishes, including but not limited to fish, shellfish, and crustaceans, according to established recipes and standards.
- Ensure that seafood is sourced, stored, and handled in compliance with food safety regulations to maintain quality and freshness.
- Execute cooking techniques specific to seafood, such as grilling, steaming, frying, and poaching, to enhance flavor and texture.
- **Menu Development and Innovation**:

- Collaborate with the Head Chef and culinary team to develop seafood-focused menu items that showcase seasonal ingredients and culinary creativity.
- Contribute ideas for new dishes, specials, and tasting menus, incorporating innovative cooking techniques and flavor combinations.
- Conduct research on seafood trends, ingredients, and techniques to continually refine and enhance the restaurant's offerings.
- **Kitchen Operations Support**:

- Work closely with other members of the kitchen team to ensure smooth and efficient operations during service periods.
- Assist with mise en place, including the preparation of stocks, sauces, and other components needed for seafood dishes.
- Maintain cleanliness and organization in your workstation, adhering to food safety and sanitation standards at all times.
- **Quality Control and Presentation**:

- Uphold high standards of food quality, consistency, and presentation, paying attention to detail in every aspect of preparation and plating.
- Conduct regular taste tests and inspections of seafood dishes to ensure they meet the restaurant's standards for flavor, texture, and appearance.
- Monitor portion sizes and plate presentation to minimize waste and maximize guest satisfaction.
- **Training and Development**:

- Mentor and train junior members of the culinary team, providing guidance on seafood preparation techniques, cooking methods, and culinary best practices.
- Lead by example in the kitchen, demonstrating professionalism, teamwork, and a commitment to excellence in every aspect of your work.

**Qualifications**:

- Proven experience as a Chef de Partie or similar role in a professional kitchen environment.
- Specialization in seafood cuisine, with a strong knowledge of different types of seafood, cooking techniques, and flavor profiles.
- Culinary degree or certification from a recognized culinary school is preferred.
- Ability to work effectively in a high-pressure, fast-paced kitchen environment, maintaining composure and attention to detail during busy service periods.
- Excellent organizational and time management skills, with the ability to prioritize tasks and manage multiple responsibilities simultaneously.
- Strong communication and teamwork skills, with the ability to collaborate effectively with other members of the culinary team.
- Flexibility to work evenings, weekends, and holidays as required.
