Executive Pastry Chef

The Client of Talentmate is seeking a highly skilled and experienced Cold Kitchen Supervisor to oversee the daily operations of our cold kitchen. This individual will work closely with the Executive Chef to develop seasonal menus, manage inventory, and maintain the highest standards of food safety and quality.
Key Responsibilities:
- Cold Food Preparation: Prepare and present cold food items such as salads, pâtés, and cured meats.
- Innovative Menu Development: Develop and implement creative and innovative menu items that showcase the best of our ingredients.
- Inventory Management: Monitor inventory levels and ensure proper storage and rotation of ingredients to minimize waste and optimize freshness.
- Cleanliness and Organization: Maintain the cleanliness and organization of the cold kitchen area, ensuring a safe and efficient working environment for all staff.
- Staff Supervision: Train, mentor, and supervise the cold kitchen staff to ensure they have the skills and knowledge needed to perform their duties effectively.
- Menu Planning: Collaborate with the Executive Chef to create seasonal menus that reflect the best of our culinary expertise.
- Regulatory Compliance: Ensure compliance with all health and safety regulations, maintaining the highest standards of food safety and quality.
- Interdepartmental Collaboration: Coordinate with other departments to ensure timely service and seamless execution of menu items.
Requirements:
- A culinary degree or equivalent work experience in a high-volume kitchen environment.
- Proven experience as a Cold Kitchen Supervisor or similar role, with a track record of success in leading teams and driving results.
- In-depth knowledge of cold food preparation techniques, including food safety practices and HACCP principles.
- Strong organizational and leadership skills, with the ability to motivate and inspire team members to achieve excellence.
- Excellent communication and interpersonal abilities, with the capacity to build strong relationships with colleagues, management, and external partners.
