Key Responsibilities:
- Outlet Management: Ensure that beverage outlets are managed efficiently, in line with our established concept statement, providing a courteous, professional, and flexible service at all times.
- Senior Manager Opening and Closing: Be constantly involved in the operation, ensuring that there is a senior manager opening and closing every single function.
- Staff Entertainment: Ensure that staff entertain guests in the bar, providing a welcoming and engaging atmosphere.
- Training and Development: Train bartenders in freestyle, mixology, and cocktails, ensuring they have the skills and knowledge to provide exceptional service.
- Daily Briefings: Conduct daily pre-shift briefings to employees on preparation, service, and menu, ensuring they are well-informed and prepared for the day ahead.
- Sales and Upselling: Approach guests suggesting a cocktail/wine or non-alcoholic beverage and recommending promotional items, using approved suggestive selling techniques to upsell products with higher profit margins.
- Inventory Management: Maintain knowledge of bar inventory and wine selection, responding appropriately to guest questions and ensuring that stock levels are always optimal.
- Recipe Knowledge: Maintain a thorough knowledge of beverage recipes and mixing procedures, ensuring that all drinks are prepared to the highest standards.
- Bar Setup and Cleanliness: Maintain responsibility for the setup and cleanliness of the entire bar, ensuring that it is always presented in a clean and welcoming manner.
- Display and Presentation: Be responsible for an attractive display of the beverage selection, ensuring that it is visually appealing and inviting to guests.
- Policy and Procedure: Maintain a thorough knowledge of standard policies and procedures regarding cash handling, check-writing, credit cards, city ledger, and customer ledger, ensuring that all transactions are handled efficiently and accurately.
- Menu Evaluation: Evaluate the bar and beverage menus and give suggestions for improvement to the Restaurant Manager/General Manager, ensuring that our offerings are always relevant and appealing to our guests.
