Hotel Butchery Expert required for Mandarin Oriental Hotel Group Limited.

This position offers the opportunity to work in a luxury hotel environment and contribute to delivering exceptional culinary experiences to our discerning guests.

As a key member of our culinary team, you will be responsible for preparing and presenting dishes with attention to detail and delivering them promptly to our guests. You will also assist in maintaining a clean and efficient kitchen and training junior staff members.

Key Responsibilities:

  1. Meat Preparation: Oversee butchery tasks, including breakdown, deboning, cutting, and trimming of various meats in accordance with menu requirements.
  2. Quality Control: Prepare and portion cuts accurately, maintaining consistency and quality across all offerings.
  3. Inventory Management: Monitor and manage stock levels of meat and related supplies.
  4. Collaboration: Work closely with the Head Butcher to plan and prepare any special cuts.
  5. Food Safety: Ensure meat is properly stored, labeled, and rotated according to established standards to minimize waste.
  6. Support: Assist with the inventory of meats and other butchery-related supplies.
  7. Leadership: Ensure that agreed quality, hygiene, and other standards are kept or surpassed at all times by yourself and your subordinates.
  8. Communication: Encourage proactive, efficient, and effective inter-departmental communication within and beyond the Food and Beverage division to promote a climate of teamwork and enthusiasm.

Qualifications and Requirements:

  1. Certification: High School qualification or equivalent.
  2. Educational Background: Degree or Higher National Diploma in Hospitality/Culinary arts is preferred.
  3. Experience: Experience as Chef de Partie - Butchery in a high-volume restaurant or hotel operation with highest levels of service is preferred.
  4. Professional Development: A minimum of 3 years' experience working in a 5-star hotel or free-standing restaurant environment.
  5. International Exposure: International work experience in at least two of the following regions: Asia, Europe, North America, and preferably Middle East.
  6. Additional Skills: Hotel pre-opening or renovation experience is preferred.
