**Position Summary**: The Sous Chef will play a pivotal role in the daily operations of our kitchen, supporting the Head Chef and the Kitchen Manager by maintaining quality standards, ensuring adherence to recipes, and supervising kitchen staff. This is a hands-on position with significant responsibility for food preparation, portioning, and inventory management, ensuring consistency and efficiency across high-volume production cycles. The Sous Chef must also be comfortable working night shifts when required to meet production demands. With a focus on minimizing waste and achieving cost goals, this role is ideal for someone with a strong background in catering or meal plan production, who understands the nuances of large-scale food preparation.

**Key Responsibilities**:

- **Kitchen Operations**:

- Oversee daily food preparation and cooking, maintaining high standards of consistency and quality for all meal plans.
- Support the Head Chef and the Kitchen Manager in optimizing kitchen workflow, ensuring timely and efficient production.
- Monitor adherence to recipes and portion sizes, helping maintain strict cost control and nutritional accuracy.
- **Inventory & Waste Management**:

- Ensure accurate stock rotation through the FIFO system to reduce waste and keep ingredients fresh.
- Conduct regular inventory assessments, assist with orders, and manage stock levels in preparation for production cycles.
- Monitor food usage and make adjustments to achieve targeted food cost goals, working closely with procurement.
- **Team Leadership & Training**:

- Train and supervise kitchen staff, reinforcing best practices in food handling, portioning, and quality control.
- Oversee junior kitchen staff to ensure adherence to protocols and safety standards.
- Provide guidance, feedback, and support to create a positive, high-performance work environment.
- **Quality & Safety Compliance**:

- Implement and uphold food safety and hygiene standards, including HACCP, ensuring a safe kitchen environment.
- Conduct routine checks on food quality, equipment, and sanitation standards to meet high safety and cleanliness standards.
- Collaborate with the quality control team to resolve any quality-related issues promptly.
- **Menu Development Support**:

- Assist in implementing new menu items, ensuring recipes are properly followed and staff are trained on new procedures.
- Participate in recipe testing and refinement, aligning with cost targets and quality expectations.
- Work with the kitchen team to identify areas for improvement and support operational efficiencies.

**Qualifications**:

- **Experience**:

- Minimum 3-5 years in a kitchen management or sous chef role in catering or meal plan production, with a solid understanding of large-scale food preparation.
- Proven experience managing high-paced kitchen operations and supervising kitchen staff in a similar setting.
- **Education**:

- Culinary Arts diploma or relevant certification in food production, culinary management, or a related field is preferred.
- **Skills**:

- Strong knowledge of food preparation, portion control, and inventory management.
- Proficiency in Google Sheets for production tracking, portioning, and inventory management.
- Familiarity with HACCP and other food safety standards, with a commitment to maintaining hygiene and quality protocols.
- Fluency in English and excellent organizational and communication skills.
- **Additional Requirements**:

- Ability to work night shifts as needed to meet production demands.
- Strong attention to detail with a commitment to delivering high-quality, consistent products.
- Team-oriented with a collaborative approach, capable of mentoring and motivating kitchen staff in a fast-paced environment.
