Job Summary

We are seeking a highly skilled and experienced Executive Chef to join our team at Mövenpick Hotels & Resorts. As a key member of our culinary team, you will be responsible for overseeing the kitchen and stewarding operations of the hotel, ensuring that our guests receive the highest levels of service and quality.

Key Responsibilities

  • Planning and Organization
    • Utilize information on forecasts and reports to plan a smooth and uninterrupted operation, ensuring that our guests receive exceptional service and quality.
    • Make requisitions of all items needed for the next day, prioritizing and organizing your and your team's daily tasks to ensure on-time delivery.
    • Coordinate purchasing for the kitchen and stewarding departments with the finance team, adhering to hotel procedures.
  • Food Cost Management
    • Monitor food costs daily to ensure that monthly targets are achieved without compromising product quality.
    • Adhere to and monitor departmental operating expenses, ensuring that they are in line with budgets and forecasts.
  • Staff Management
    • Review and monitor departmental work schedules, ensuring that payroll is in line with budgets.
    • Assist the Executive Chef with the preparation and conversion of departmental promotions calendars.
  • Menu Development
    • Ensure that all menus are accurately costed, have standard recipes, and presentation photos.
    • Coordinate with Food and Beverage Operations to develop new menu items, including staff education and tasting.
  • Compliance and Quality
    • Ensure full compliance with local municipality HACCP standards and certification.
    • Work with the Executive Chef to identify new potential revenue streams, including outside catering opportunities.

Requirements

  • Proven experience as an Executive Chef or in a similar role.
  • Strong leadership and management skills, with the ability to motivate and inspire a team.
  • Excellent communication and interpersonal skills, with the ability to work effectively with colleagues and stakeholders.
  • Ability to work in a fast-paced environment, with a high level of attention to detail and a commitment to quality.
