Job Title: Steward

We are seeking a highly skilled and experienced Steward to join our team at Accor. As a Steward, you will play a vital role in ensuring the smooth operation of our hotel's food and beverage services.

Key Responsibilities:
  • Team Management: Manage sections, plan rosters, shifts, and teams of stewards to achieve a smooth, safe, and hygienic environment in accordance with business demands and cost control measures.
  • Collaboration: Work together with all staff harmoniously to ensure seamless service delivery.
  • Equipment Knowledge: Have thorough knowledge of the use of all operating equipment and cleaning processes.
  • Hygiene and Sanitation: Be aware of and implement the hotel's hygiene and sanitation standards and procedures.
  • Fire and Life Safety: Be aware of the hotel's fire and life safety standards and procedures.
  • Cleanliness and Order: Ensure cleanliness and order of all stewarding stores.
  • Clean as You Go: Follow the clean as you go policy and keep work areas clean at all times.
  • Uniforms: Wear uniforms according to Accor standards.
  • Independence: Be able to work unsupervised.
  • Flexibility: Be able to be flexible to business demands and working hours.
  • Cross-Training: Be able to work in another area when needed and take part in cross-training when directed.
  • Safety Practices: Ensure all stewards follow safe working practices, especially when working with chemicals.
  • Supply Management: Practice economy of supplies, consumables, electricity, and water whenever possible.
  • Teamwork: Co-operate and work as a team.
  • Support: Support the chefs and front-of-house staff in any cleaning requests.
  • Equipment Preparation: Prepare adequate and appropriate equipment for projected F&B needs.
  • Equipment Maintenance: Ensure that equipment is replaced in the correct areas after usage.
  • Breakages: Control and record any breakages in accordance with the hotel's policy.
  • Kitchen Cleaning: Perform kitchen overnight deep cleaning.
  • Surface Maintenance: Ensure that floors, walls, and all surfaces are maintained and kept clean in the kitchen and back-of-house areas.
  • Equipment Cleaning: Clean all kitchen equipment.
  • Maintenance Reporting: Report any maintenance and faulty equipment.
  • Ice Machine Cleaning: Clean ice machines.
  • Shelf and Filter Cleaning: Clean shelves and filters.
  • Polishing: Polish silver, bronze, and copper.
  • Dishwashing: Wash dirty F&B operating equipment.
  • Dishwasher Maintenance: Maintain the dishwashing process and equipment.
  • Trolley Handling: Handle and clean equipment trolleys.
  • Waste Disposal: Dispose of garbage and recycling following the correct procedures.
  • Procedures: Use the correct procedures according to hotel standards.
  • Cleaning Agents: Use the correct cleaning agents and quantities appropriate for the designated uses.
  • Cleaning Equipment: Use the correct type of cleaning equipment appropriate for the designated uses.
  • Equipment Storage: Properly handle and store equipment (e.g., appropriate temperature control of machinery).
  • Additional Responsibilities: Assist in any other functions and areas as informed by the Executive Chef or Executive Sous Chef.
  • Training and Development: Train and develop stewards to adhere to the correct working practices.
