Job Description

We are seeking a highly skilled and experienced Assistant Restaurant Operations Manager to join our team at Mandarin Oriental Hotel Group.

Key Responsibilities:

  • Support the Restaurant Manager: Collaborate with the Restaurant Manager to ensure seamless operational and administrative aspects of the restaurant, including prioritizing engagement levels based on business volumes and other relevant parameters.
  • Outlet Leadership: Take charge of the outlet and department in the Restaurant Manager's absence, enforcing and monitoring operational standards, policies, SOPs, and quality measures.
  • Shift Management: Oversee daily operations, manage shifts effectively, and ensure a smooth and efficient overall operation.
  • Communication and Relationship Building: Maintain a good relationship and steady communication with the Chef de Cuisine and his team, particularly during operation hours.
  • Reservations and Seating: Ensure effective management of reservations and maximize seating capacities within the outlet.
  • Quality Control: Identify areas for improvement in service and food and beverage quality by reviewing service quality audit reports, guest comment cards, and guest incident reports, and share observations and recommendations with the outlet manager.
  • Menu Management: Ensure accuracy of all menus, including current, spelled correctly, clean, and presentable, and ascertain menu descriptions are up to date and distributed appropriately.
  • Accounting and Records: Follow all procedures, policies, and practices related to Jardine accounting requirements for F&B outlets and maintain solid records of Annual Leave and Public Holiday clearance.
