Assistant Head Sommelier is responsible for assisting the Head Sommelier in ensuring that the wine department is well managed and running a successful operation within the Club and that service, standards and procedures are adhered to at all times, while continually improving guest satisfaction. He/she will deputize for the Head Sommelier in his/her absence overseeing the entire operation of the Sommelier department.

Additionally, accountable for operating within budget to consistently ensure the highest quality of all the wines served, whilst controlling cost to maximise the gross profit percentage and helping to ensure financial success of the department. He/she will be responsible for creating and maintaining a harmonious work environment for the entrusted team ensuring their growth and development.

WHAT YOU WILL DO:

- Take guidance from the Head Sommelier and ensure the wine list is up to date at all times with correct vintages
- Pair and suggest wines that will complement the menu items
- Support the team for the wine deliveries and ensure all products are stored properly in the wine cellar
- Ensure the cleanliness and orderliness of the wine cellar at all times
- Act as an ambassador in assisting members and guests with their wine selection and serve wines according to the Standard of Performance manual
- Report and document any faulty wines
- Report to the Head Sommelier or Restaurant Manager all complaints with action to be taken. Handle complaints, requests and enquiries regarding wine in the absence of the Head Sommelier
- Actively train all colleagues in wine knowledge
- Ensure that all food, beverage and tobacco items served are recorded in the manner detailed in the Standards of Performance manual, in order that they may be charged for
- Ensure all menus in circulation are updated and in good condition
- Work closely with the floor team at all times to ensure seamless service and all guest requirements are met
- WHAT WE ARE LOOKING FOR
- Minimum 2 years’ experience in same or similar role in luxury hotels or fine dining restaurant
- Internationally recognised professional certification
- Excellent level of English, written and spoken
- Ability to recommend food and wine/sake pairings
- Have strong organisational and time management skills with a high degree of flexibility
- Excellent communication and listening skills
- Demonstrate integrity in all dealings and maintain high level of confidentiality
- Ability to work long shifts and stand for the extended period of time
