**Position Profile / Job Purpose**

The Head Sommelier will be part of the food and beverage team and have excellent knowledge of world wines, the best vintages and the order in which wines should be served.

Provide courteous and professional wine and beverage services in the restaurant. Be welcoming in serving the guests. Increase wine sales by demonstrating personal attention, consulting guests on fine wine selection and how to pair wine with food.

Will be the head to lead and supervise all of the sommeliers.

**Working Hours**
- Working hours will be 54 hours per week, exclusive of meal breaks during the 6 day work-week period and 45 hours per week, exclusive of meal breaks during the 5 day work-week period.
- The requirement is to work one 6 day work-week followed by a 5 day work-week alternating between the two. The allowance permitted is 1 day off in the 6 day work-week and 2 days off in the 5 day work-week on an alternate basis; the maximum allowance should not be more than two consecutive off days in two work-weeks.

**Primary Responsibilities**
Service
- Responsible for the recommendation and sales of wines and other beverages to guests and the wine sales. Offering and promoting the digestive.
- Pamper our guests. Converse with them and be able to entertain them with a pleasing conversation.
- Maintain an attentive and proactive approach when it comes to offer a second round and ascertaining satisfaction with the product already served.
- Ensures that company policy in regards to drinking age is followed and that the service of alcoholic beverages to obviously intoxicated guests is stopped in a tactful and appropriate manner.
- Retain service standards in accordance with established policies and procedures.
- Continually seek ways to improve the quality and service provided to guests.
- Provide wine and food recommendations to guests that complement their meal and have superior knowledge of all alcoholic beverages.
- Interact with guests and maintain guest database (Respak).

**Planning and Organizing**
- Be a good team player.
- Selects and orders wine to replenish stock. Ensure appropriate storage of wine for clients and restock it as required.
- Maintain display shelves and ensure appropriate labelling of all bottles and vintage according to company policy.
- Monitor wine inventory and evaluate report to ensure consistency in wine menus.
- Ensure a consistency of high standard is maintained in the wine cellar, the wine stocks, the wine lists, the wine knowledge and the wine service in the restaurant.
- Prepare weekly order for suppliers.
- Monitor stock and exercise inventory control. Prepare spoilage report.
- Prepare the rosters of the sommelier team.
- Ensure an updated wine list is available for the restaurants at all times.
- Ensure proper rotation of stock and proper storage of stock according to the nature of the wine.
- Responsible for monthly wine inventory.
- Responsible for the training of sommelier team about beverage service and knowledge.

**Profitability**
- Execute all merchandising policies to maximize sales and profits.
- Follow inventory stocking and recording guidelines.
- Contribute to store goals for increasing sales and improving profits.
- Achieve budgeted revenues and control costs.
- Participate in the preparation of the annual beverage budget of the Restaurant.
- Maintain par stock levels for operational equipment and maintain inventory control procedures.
- Liaise with Group Beverage Manager on wine strategy and implement sales initiatives and incentive programs.
- Maintain records for spoilage and breakage according to company procedures.
- Participate in negotiations of the contract/agreement with the supplier.
- Organize beverage events like wine tastings, wine dinners and whisky tastings.
- Review and follow new trends in the market.

**Qualifications**
- Diploma / Degree in Hospitality Management.
- WSET Sommelier certification and/or a Sommelier Diploma from a recognized institution
- Minimum of 3-4 years experience in a fine dining restaurant as Sommelier with a strong emphasis on wine. Professional Head Sommelier ideally from a Michelin star background.
- Must possess outstanding guest services skills, professional presentation and sophisticated communication skills
- Training / Certification in wine tasting and pairings.
- Have good wine knowledge from the old and the new world.
- Practical knowledge of beverage operations and service
- Strong knowledge of wine service procedures

**Languages**:

- English - proficiency and written English
- Arabic - preferred
- Additional language - preferred

**Personal hygiene**:

- To practice high standards of personal hygiene at all times in terms of grooming and uniform. Maintain appropriate appearance on the job.
- To maintain the required standards of operational hygiene at all times.
