Minimum 3-4 years experience in UAE hotel in food cost controller role is required, extensive knowledge of Prolific, Touche and other POS and inventory systems. Minimum diploma in Accounting. Good knowledge of recipe, menu costing and cost analysis.

The job will include the following:

- Study, analyze and report on all variances relating to costs and inventory management within the hotel administration.
- Creating articles/units based on the product with category linking.
- Supervises and verify daily postings of receiving and store keeping activities
- Define minimum and maximum stock levels, par stock management systems
- Approving the store issue vouchers, account for inventory movement with proper documentation
- Work closely with Procurement Department team for pending and partial deliveries
- Approving the F&B purchases with support documents required
- Controlling the issues of F&B supplies, Housekeeping, kitchen & general supplies.
- Perform the physical count of food, beverage stocks and month-end inventory
- Preparing the flash food cost daily or weekly.
- Market survey on the products prices apart from procurement.
- Preparing entertainment/complimentary checks.
- Recipe costing and suggesting the selling price.
- Conduct Yield Tests for food items.
- Perform daily and monthly F&B reconciliations, using POS system
- Month end F&B Cost reconciliation.
- Posting the Jv’s according to the F&B reconciliation.
- Creating the Menu POS items & Linking with proper SLU.
- Printer linking to the POS menu item.
- Happy hour time slots creation.
- Creation of discounts keys.
