Job Title: Commi  (South Indian)Location: Dubai, UAEReports to: CDP / Sous ChefExperience: Minimum 3 years in a professional kitchen (South Indian cuisine preferred)Employment Type: Full-timeJob Purpose: The Commi – South Indian Focus is a skilled kitchen professional responsible for independently preparing, cooking, and presenting key South Indian dishes such as dosas, idlis, vadas, chutneys, and traditional South Indian thalis. The role requires a deep understanding of regional cuisine, attention to detail, time management, and the ability to guide junior kitchen staff. The Commi will work under the direction of the CDP/Sous Chef to maintain food quality, consistency, and hygiene standards.Key Responsibilities1. Food Preparation & CookingEnsure timely preparation and consistent quality of South Indian dishes.Prepare a variety of South Indian breakfast and meal items including dosa, vada, upma, idli, pongal, and sambarMaintain consistency in taste, portioning, and presentation according to company recipes and SOPsPlate dishes attractively and ensure they are served hot and freshAdjust seasoning and textures as needed based on feedback and menu development2. Kitchen Operations & CoordinationRun the assigned section smoothly and support overall kitchen flow.Coordinate with the service team to ensure timely order executionManage mise-en-place efficiently for breakfast and lunch servicesCommunicate with CDP on prep levels, shortages, or challengesMaintain checklist of opening and closing tasks in your section3. Inventory & Stock MonitoringMaintain optimal levels of raw materials with minimal wastage.Monitor daily stock usage and report discrepancies to the kitchen in-chargeEnsure FIFO method is followed for perishables and semi-prepared itemsRequisition ingredients in a timely manner and avoid last-minute shortagesSafely store and label all food products in compliance with hygiene protocols4. Team Support & MentorshipHelp develop junior commis and maintain discipline in the section.Guide kitchen helpers in prep tasks and hygiene practicesEnsure kitchen teamwork and cooperation during rush hoursAct as a role model in kitchen conduct, punctuality, and work ethicsSupport training of new hires in your section 5. Hygiene, Safety & ComplianceEnsure 100% adherence to food safety, fire safety, and cleanliness.Always maintain a clean and organized workstationFollow personal hygiene and grooming standards as per kitchen policyUse gloves, aprons, and sanitizers as per food safety guidelinesReport and manage any maintenance or safety concerns in kitchen equipmentRequirements:Candidate age 22-35 years.Hotel Management and worked in high-end restaurants/hotels.Language- English & Hindi preferredProficiency in South Indian Cuisine- dosa and idli batter preparation, tawa handling, chutneys, and gravies • Strong knowledge of kitchen hygiene practices and food safety standards (FSSAI compliance)Flexibility to work in rotating shifts, weekends, and festival daysExperience 1-3 years UAE or India.Ability to work efficiently under pressure in a fast-paced kitchen environment.Some prior experience in a professional kitchen, especially with South Indian cuisine, is an advantage.Basic understanding of cooking techniques, ingredients, and kitchen equipment.
