As the Bakery Operations Manager, you will be responsible for planning, organizing, directing, and controlling the day-to-day operations of the bakery facility. You will ensure high standards in product quality, food safety, equipment maintenance, and operational efficiency, all while maintaining compliance with Dubai Municipality regulations. Your goal is to reduce operating costs, improve productivity, and foster a culture of continuous improvement and safety.

**Quality, Compliance & Audits**:

- Conduct quarterly internal audits; support external audits by developing and implementing corrective actions in line with audit findings and company policies.
- Ensure all products meet or exceed internal specifications and comply with Dubai Municipality food safety and quality standards.
- Meet with clients and auditors as required; ensure all documentation is aligned with regulatory requirements.

**Operations & Production Oversight**:

- Monitor and maintain all bakery machinery and equipment to ensure continuous, trouble-free production.
- Coordinate with service and maintenance providers for the regular servicing of production equipment.
- Collaborate with the Head Baker and cross-functional teams to define and execute departmental goals.

**People Management & Safety**:

- Foster a high-performance culture by coaching, training, and engaging staff to improve productivity and team morale.
- Enforce company policies, safety regulations, and HACCP requirements consistently across teams.
- Promote and maintain a safe and healthy work environment in accordance with company standards.

**Financial & Inventory Management**:

- Manage production department budgets efficiently.
- Calculate and compare costs of goods and services to achieve cost-effectiveness and operational efficiency.
- Maintain inventory records of raw materials, packaging, and equipment; ensure timely procurement and delivery.
- Obtain and compare quotes from suppliers and vendors for bakery equipment and services.

**Administrative & Facility Management**:

- Supervise maintenance and repair work for facilities and equipment.
- Ensure all operational paperwork is properly completed, filed, and audited regularly, including food safety documentation.
- Schedule and oversee the receipt of deliveries; verify contents for quantity and quality compliance.
- Report operational KPIs, downtime and performanc eissues to management.
- Prepare yearly budget for the production department

**Staff Scheduling & Performance Monitoring**
- **Develop and manage staff schedules** for the operations team, including packers, drivers, storekeepers, and cleaners, ensuring optimal manpower allocation across shifts to meet production and delivery demands.
- Monitor daily attendance and punctuality; coordinate with HR to track leave balances and address absenteeism.
- Conduct daily briefings and assign tasks to ensure clarity in responsibilities and alignment with production priorities.
- Oversee and evaluate staff performance on the production floor, in the warehouse, and during deliveries.
- Ensure all team members follow hygiene, safety, and operational standards consistently.
- Address performance issues promptly and provide feedback or disciplinary action when required.

**Additional Duties**:

- Perform other responsibilities and tasks as assigned to support business operations.
