Job Summary

Mandarin Oriental Hotel Group Limited is seeking a highly skilled and experienced Head Sommelier to join our team. As a key member of our Food and Beverage department, you will be responsible for creating and maintaining our wine menu, managing wine inventory, and providing exceptional service to our guests.

Key Responsibilities
  1. Wine Menu Creation: Develop and maintain a comprehensive wine menu for all outlets, ensuring a diverse selection of wines that meet the highest standards of quality and excellence.
  2. Wine Inventory Management: Oversee the management of wine inventory, including ordering, receiving, and storing wine, as well as maintaining accurate records of wine stock levels.
  3. Wine Service and Education: Provide exceptional wine service to guests, including wine recommendations, wine pairings, and wine education. Train colleagues on wine-related subjects to ensure a high level of knowledge and expertise throughout the team.
  4. Wine List Creation and Rotation: Create and maintain wine lists for all outlets, ensuring that they are up-to-date, accurate, and meet the highest standards of quality and excellence.
  5. Wine Sales and Revenue Growth: Analyze wine sales data to identify trends and opportunities for growth, and develop strategies to increase wine sales and revenue.
  6. Team Leadership and Development: Provide leadership, direction, and support to colleagues, including training and development programs to enhance their knowledge and skills in wine-related areas.
  7. Customer Satisfaction: Ensure that all guests receive exceptional service and have a memorable experience, with a focus on delivering high levels of customer satisfaction.
Requirements
  1. Education: High School qualification or equivalent, with a degree or higher national diploma in Hospitality/Hotel/Business Management, or a specific diploma/degree in wines and beverage.
  2. Experience: A minimum of 4 years of experience working in a 5-star hotel environment, including 2 years in Food and Beverage, with experience as a Head Sommelier or Beverage Manager in a high-end restaurant preferred.
  3. Skills and Qualifications: Extensive knowledge of wines, particularly details about grapes varieties, harvest times, origin of the wine, structure, aroma, flavor, and fermentation process. Strong interpersonal and communication skills, with the ability to interact effectively with guests and colleagues. Exceptional organizational skills and attention to detail, with the ability to multitask and prioritize in a fast-paced environment.
