Job Summary

We are seeking a highly skilled and experienced Commis I to join our culinary team at Four Seasons Hotels and Resorts. As a key member of our kitchen team, you will be responsible for preparing and cooking food to the highest standards, ensuring exceptional quality and presentation.

Key Responsibilities
  • Food Preparation and Cooking: Prepare and cook food according to standard procedures, recipe cards, photographs, and given instructions.
  • Recipe Development: Assist the Chef de partie/Demichef de partie in establishing standard recipes and ensuring compliance with them.
  • Quality Control: Constantly inspect taste, temperature, and visual appeal, ensuring that all dishes are uniform and that established portion sizes are adhered to.
  • Product Development: Participate in product development and control the smooth operation of the kitchen.
  • Food Quality and Safety: Ensure food quality, food taste, food presentation, and food requisition.
  • Culinary Knowledge: Have a good knowledge of cuisines to carry out duties and responsibilities for the position in an efficient and productive manner.
  • Shift Management: Be able to manage a shift.
  • Sanitation and Cleanliness: Ensure proper sanitation procedures are followed and the kitchen is always clean, neat, and tidy.
  • Team Collaboration: Assist the Chef's in the day-to-day operation of the kitchen and help maintain a high standard of food preparation.
  • Equipment Maintenance: Ensure all equipment is in full working order.
  • Supply Chain Management: Ensure an adequate supply of all products prepared on a timely basis.
  • Inventory Management: Requisition all items needed for the following day from the food storeroom, non-food storeroom, and stewarding department.
  • Room Amenities: Prepare exciting and appealing room amenities when needed.
  • Professionalism and Communication: Demonstrate and maintain at all times a professional behavior and positive attitude.
  • Emergency Response: Respond properly in any hotel emergency or safety situation.
  • Additional Responsibilities: Perform other tasks or projects as assigned by hotel management, including packaging design, procurement, marketing, and merchandising of food products in conjunction with the Executive Chef and Food and Beverage Director.
  • Certifications and Training: Be certified in Food Service Sanitation as available and implement protocols.
  • Alternative Cuisine and Spa Cuisine: Execute Alternative Cuisine and Spa Cuisine.
Requirements
  • Knowledge and Skills: Provide a friendly and professional service that always exceeds guests' expectations.
  • Communication and Teamwork: Assist in phone coverage with other departments.
  • Administrative Tasks: Assist the department to upkeep relevant noticeboards.
  • Documentation: Prepare related paperwork for new hires.
  • Technical Skills: Requires knowledge and the ability to operate computer equipment, including word processing and spreadsheet software, plus other systems (i.e. Opera, Windows, Bayan payroll and analysis reports, etc).
  • Health, Safety, and Welfare: Accept responsibility for the health, safety, and welfare of all areas of the department, guests, and employees and respond properly in any hotel emergency situation.
