**Your day today**
- To be familiar with local market and recommend menu changes according to the seasonal product availability.
- To achieve department budget goals and minimize food costs by ensuring that proper preparation, inventory, requisition, food pars and control systems are in place.
- To adhere to the hotel food preparation and presentation guidelines to ensure consistent quality culinary offerings to our guests. Continually look to recommend improvements and additions to the presentation guidelines.
- To accurately forecast business demands on a weekly basis to ensure efficient staffing & food production.
- To be responsible for always maintaining outlet safety.
- To be responsible for asset management of all outlet property and facilities.
- Conduct a preventative maintenance inspection monthly.
- To lead and fully participate in departmental training to improve departmental skills and hotel service levels, providing team members with the training and resources to take care of our guests.
- Promote positive inter-departmental relations through candid communication and cooperation.
- To lead by example through a “hands-on” approach to motivating our host to excel.
- Technical Responsibilities
- Organize all activities within a Restaurant Kitchen area, ensuring a safe, smooth running and profitable operation within the framework of the Hotel.
- To develop and maintain the Restaurant cuisine concepts and standards for food preparation and presentation.
- To maintain food safety & protection. All food in working areas should follow food handling techniques, including dating, proper storage, rotation, etc. Maintain basic food safety and sanitation practices.
- You will always try to anticipate and exceed the guest's needs.
- Use your own initiative and good judgement to solve problems in a calm and efficient way.
- Always act with personal professionalism and integrity.
- Operate, maintain, and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill, etc.
- Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up, note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables; assist in setting up plans and actions to correct any food cost problems; control food waste, loss, and usage per policies.
- Personally responsible for hygiene, safety, and correct use of equipment and utensils.
- Ability to produce own work in accordance with a deadline and to assist and encourage others in achieving this aim.
- Daily feedback collection and reporting of issues as they arise.

Ideally, you'll have a minimum of 3 years experience in a similar role in a four or five-star hotel or comparable industry, the ability to demonstrate working with and engaging teams from different cultures, strong verbal and written communication skills along being quality-oriented with a focus on details, high-performance standards, able to multi-task in the kitchen & meet deadlines and Committed to serving food of the highest quality and you should have knowledge about the HACCP implementation in the Kitchen.
