Reports to: Outlet Manager, Assistant Outlet Manager, Sommelier

Direct Reports: Bartender, Bar Back

Financial Accountability
- Maintain awareness of Outlet(s) financial performance.
- Utilize up-selling and suggestive selling techniques to enhance the Outlets financial performance.
- Make recommendations to the Outlet Manager / Assistant Manager for price and menu changes that will enhance profitability.
- Supervise and monitor breakage of chinaware and glassware and the implementation of strategies to reduce where possible.
- Maximize sales and profit by providing excellent value and service and utilizing suggestive and up-selling techniques.
- Ensure that care is taken in the handling of all operating equipment so as to minimize breakage/damage.
- Ensure all bills are checked for accuracy prior to presentation.
- Adhere to all JI cashiering and cash handling procedures at all times.

Conditions of Work:
To work in a variety of Food & Beverage environments including indoor and outdoor condition, as well as exposure to smoky environments and harsh variations in weather conditions. Some heavy lifting may be required while on duty

**Role Overview**

Purpose:

- To achieve and maintain a high level of customer service. To ensure stock levels are maintained, that the bar is properly set before service and that high levels of cleanliness are maintained. To comply with local licensing laws and to promote responsible service of alcohol. To understand and be responsible for cashing up procedures. To be abreast of local and international bar trends and new products. To be classically trained in cocktails and also innovative.

Main Duties:
**Operational**:

- Delivers best in class drinks to specification consistently.
- Has impeccable knowledge of all products in the portfolio and can make all drinks as per the brand standard. Has a good knowledge of all beverages beyond those stocked in the restaurant and has a working knowledge of classic cocktails and drinks.
- Is a dedicated trainer.
- To understand and comply with all local licensing laws and to promote responsible service of alcohol.
- Assists the bar manager in managing stock, ordering, returns and stocktakes. Can receive and log all deliveries.
- Has a full understanding of the brand concept, history and vision and can explain when asked.
- Understands and will assist with the Brand audit and will implement any actions required.
- Ensures that problems are brought to General Manager’s attention immediately
- To lead by example with excellent customer service. To always aim to exceed expectation.
- Actively looks for ways in which they can develop their career. Completes an IDP.
- Is able to work as part of a team and contribute ideas where necessary.
- Takes responsibility for and completes own probationary and appraisal paper work as required.
- Attends and asks to attend all training as required by the business.
- Actively engages with colleagues and customers at all times.
- Communicates to managers any issues immediately.

**Health & Safety**:

- Maintains high levels of cleanliness in the working environment and ensures that daily cleaning rota's are adhered to.
- Has trained and fully complies with all H&S standards.

Tertiary Education or Diploma in Food & Beverage Management.

Technical beverage certification

Experience

Minimum of 1 year experience in a Mixologist role with standalone/branded restaurants.

**Skills**:

- First class mixologist foremost
- Sell the drinks they make to the guest
- Flair style and naturally cool
- Has full working knowledge and understanding of all cash up and banking.
- Is able to make simple decisions that effect their own work or the customers experience in a positive manner
- Can handle a minor complaint with confidence.
- Can suggestively sell with confidence.
- Can conduct an inventory count fully and correctly.
- Is organised in their duties
- Has good time management skills
