The **Sushi Maker** is responsible for carrying out the production of all menu items, preparing the required mise-en-place, and ensuring the proper handling and storage of food.
**Role Details - Key Responsibilities and Accountabilities**:
**Operations Responsibilities**
- Prepare menu items and substitute and required items
- Ensure proper portion, arrangement, and food garnish
- Maintain food logs
- Monitor the quality and quantity of food that is prepared
- Identify and report excess food item
- Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist
- Follow all company and safety and security policies and procedures
- Good knowledge of Allergens in different types of food
- Prepare a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi)
- Prepare all types of sushi, including Maki, Nigiri and Sashimi by expertly cutting, slicing, and filleting different types of fish
- Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
- Manage food prep activities
- Coordinate with our staff to ensure proper cooking, considering special requests and food allergies
- Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine while recommending new, modern recipes, like sushi burgers
- Maintain hygiene principles in all cooking areas and clean your space at the end of the shift
- Inspect the quality of fruits, vegetables, and fish used to prepare sushi dishes
- Maintain a clean work environment in order to prevent food contamination
- Regularly check inventory of food supplies and other products, monitor food stock and place orders
- Report any issues with kitchen equipment to the manager on duty
- Sterilize all utensils, instruments, and equipment used in sushi preparation before every use
- Communicate with staff to ensure that special requests and food allergy considerations are met
**Minimum Qualifications/education**
- High school diploma or equivalent
**Minimum Experience**
- 2+ years of related culinary experience
- Experience working with high volume production
**Skills**
- Highly organized with strong multitasking skills
- Adapt in a multicultural environment
- Excellent listening abilities
- High attention to detail
English (Full professional proficiency - Required); Arabic is preferable
Pay: AED3,500.00 - AED3,700.00 per month
Ability to commute/relocate:
- Dubai: Reliably commute or planning to relocate before starting work (required)
