1. CulinaryExpertise

  • SushiPreparation: Proficient in making various types ofsushi, including nigiri, sashimi, maki, and temaki, with anemphasis on quality andpresentation.
  • IngredientKnowledge: Strong knowledge of traditional andmodern sushi ingredients, such as fish, rice, seaweed, vegetables,and garnishes.
  • KnifeSkills: Excellent knife skills for slicing fish,cutting vegetables, and preparing sushi components withprecision.
  • MenuKnowledge: Understanding the sushi menu, includingseasonal variations, specialty items, and the ability to preparecustomized orders based on guestpreferences.

2. KitchenManagement andOrganization

  • StationManagement: Efficiently manage the sushi station,ensuring that ingredients are prepped and ready, and that the workarea is clean and organized.
  • TimeManagement: Work quickly and efficiently to meetorder demands, especially during peak hours, while maintaining highstandards.
  • InventoryControl: Assist with ordering, storing, and rotatingingredients, ensuring freshness and minimizingwaste.

Desired candidate profile

As aJunior Sous Chef at Nobu By The Beach, you will be in command inthe kitchen under the supervision of the Sous Chef. You will bemanaging and organising the kitchen team to deliver consistent foodquality aimed at creating amazing experiences for guests. You willbe ensuring that all safety guidelines are followed and are inaccordance to the standard operating procedures as implemented bythe Executive Chef. In this role you will be coordinating andsupervising food and supplies, budgeting expenses and preparingmenus. In the absence of the Chef de Cuisine, you will attend dailybriefings and monthly operational meetings in order to ensure thatall applicable action points arefollowed.

AboutYou

The ideal candidate musthave a Diploma in Catering with a minimum of 5 years professionalkitchen experience. Relevant experience in fast-food restaurant orin a specific style of cuisine related to the position is alsorequired. Experience in a similar role within a 5-star Hotelenvironment together with a suitable experience in leadership isessential in this role.
