JOB OVERVIEW

To ensure a smooth and efficient operation in the Food & Beverage department in relation to the company core process; thus directly impacting the delivery of the experience.

This position works alongside the Executive Chef/Chef de Cuisine to meet the department's strategic and financial goals; responsible for managing the beverage cost according to the budget. Draws up direct reports and maintains health and safety standards in the operation. Acts as Food and Beverage department head in the absence of the Commercial Director.

JOB SCOPE

• To support the Commercial Director in the running of the department
• To lead and manage the food and beverage department
• To implement and execute the set strategies to achieve the EBITDA targets
• To review financial reports and statements to monitor departmental performance against budgets
• To work with the food and beverage leadership team to determine areas of concern and to develop strategies to improve the department financial performance
• To establish challenging, realistic and obtainable goals for the department and colleagues
• To implement and monitor the standard operating procedures for the department
• To maintain a safe and healthy working environment that is compliant with local regulations (ADAFSA) and international (HACCP) best practices
• To design efficient measures to ensure prompt, accurate and personalized service to all guests to achieve high guest satisfaction levels
• To recruit, train and develop a team which passionately delivers guests service excellence
• To monitor food and beverage operational, food safety and hygiene reports in order to be updated on the daily events in the department
• To communicate new or amended procedures within the department in order to keep the outlets updated with changes
• To conduct performance appraisals for direct reports and ensure follow up and creation of development plans
• To attend company learning and development programs and trainings

• To plan and organize internal and external special events in order to contribute to the success of the company

• To manage emergency situations that may arise in order to minimize possible damage, loss or injury to any guests, colleagues or company property

• To help achieve departmental and company objectives, action plans and key performance indicators
• To ensure an efficient management of the food and beverage colleagues to include there on and off the job training, daily attendance, grooming, coaching , appraisals and personal development plans
• To communicate relevant information with colleagues in order to improve internal communication within the department and company
• To motivate colleagues through the effective implementation of incentive and recognition and rewards program
• To enforce and adhere to all UAE laws, health, safety & environmental policies, industry and company rules and regulations, reporting any safety concerns or incidents to management in order to minimize risk and maintain a clean safe and hygienic environment for all guests and colleagues
• Provide a clear guide of the core job activities/nature of the role

MINIMUM QUALIFICATIONS, EXPERIENCE AND SKILLS REQUIREMENTS

Qualifications

Essential:

• Possess tertiary level of education
• Food Hygiene and HACCP Certification

Desirable:

• Diploma in Hotel and Management or related education

Years of Experience

Essential:

• 2 years' experience in a Food and Beverage operation or related professional area in a managerial role

Desirable:

• Previous experience in a leisure facility
• Minimum 1 year of Food and Beverage Manager experience

Skills

Essential:

• Computer and Microsoft Office knowledge
• Good level of English language
• Excellent organizational skills
• Excellent verbal communication skills
• Possess a good leadership, customer service and motivational skills
• A very detail orientated and hardworking team player
• Good analytical thinking
• Problem solving
• Knowledge of food and beverage operations

Desirable:

• Working knowledge of standard cost controls and waste management
• Ability to develop good working relationships with colleagues, management and external clients
• Knowledge with EATEC and Maximo will be an asset
• Additional languages such as Arabic, Russian and Farsi would be an advantage
