ERTH Abu Dhabi is seeking a visionary and highly skilled Head Chef to lead the culinary operations of our upcoming Michelin-star restaurant located within the historic Qasr Al Hosn. The role demands a dynamic leader with an exceptional culinary background, creative artistry, and a deep understanding of fine dining standards. The Head Chef will be responsible for designing and executing a world-class dining experience that celebrates innovation, precision, and cultural authenticity — aligning with ERTH's legacy of excellence.
Key ResponsibilitiesCulinary Leadership & Innovation
- Develop and curate an exclusive Michelin-level menu, emphasizing creativity, seasonality, and locally inspired ingredients.
- Oversee the full culinary operation — from concept development to final plating — ensuring each dish meets Michelin and ERTH standards.
- Introduce innovative techniques while preserving the essence of regional and international flavors.
Operational Excellence
- Manage day-to-day kitchen operations, ensuring consistency, quality, and efficiency across all culinary activities.
- Implement and uphold the highest standards of food safety, hygiene, and sanitation in line with HACCP and UAE regulations.
- Monitor inventory, cost control, and waste management to achieve profitability targets without compromising quality.
Team Management & Development
- Lead, train, and inspire a diverse culinary brigade, fostering a culture of passion, precision, and creativity.
- Develop training programs and succession plans to ensure long-term excellence within the team.
- Conduct regular performance reviews, coaching sessions, and team workshops.
Guest Experience & Brand Representation
- Collaborate closely with F&B service teams to ensure seamless guest experiences from kitchen to table.
- Engage with guests, media, and industry influencers to represent the restaurant's vision and culinary philosophy.
- Maintain alignment with ERTH's brand identity and contribute to the property's reputation as a premier culinary destination in Abu Dhabi.
Collaboration & Strategy
- Work alongside the Executive Chef and management team in strategic planning, menu pricing, marketing collaborations, and event activations.
- Participate in cross-functional meetings to enhance service, innovation, and brand synergy.
- Minimum 10 years of culinary experience, including 5 years in a leadership role within Michelin-starred or internationally acclaimed fine dining establishments.
- Proven record in menu development, kitchen management, and achieving Michelin recognition (preferred).
- Culinary degree or equivalent from an accredited institution.
- Strong knowledge of modern and classical cooking techniques, plating aesthetics, and global culinary trends.
- Excellent leadership, communication, and organizational skills.
