**Key Responsibilities**:
- Prepare and cook authentic Mandi dishes (chicken, lamb, etc.) using traditional methods.
- Marinate meats with appropriate spices and ingredients for Mandi.
- Manage and operate traditional clay ovens or underground pits for Mandi.
- Ensure food quality, taste, and consistency align with the restaurant's standards.
- Monitor inventory, order ingredients, and manage kitchen hygiene and cleanliness.
- Train and supervise junior kitchen staff.
- Innovate and experiment with new Mandi variations (e.g., Butter Chicken Mandi) while maintaining authenticity.
- Comply with food safety and sanitation regulations.
**Requirements**:
- Proven experience as a Mandi Chef or in Arabic/ Yemeni cuisine.
- Strong knowledge of traditional Mandi recipes, spice mixes, and cooking techniques.
- Ability to work under pressure in a fast-paced kitchen.
- Attention to detail and commitment to delivering high-quality dishes.
- Strong communication and team leadership skills.
- Flexibility to work evenings, weekends, and holidays as required.
**Preferred Qualifications**:
- Culinary degree or formal training in Arabic cuisine (optional but preferred).
- Previous experience in the Gulf region or Middle Eastern restaurants.
- Ability to adapt to modern culinary trends while preserving traditional flavors.
