Responsabilités Principales du Poste
- Collaborer avec le Directeur de la Sécurité Alimentaire et des Services Environnementaux ainsi que le Responsable Adjoint de la Sécurité Alimentaire pour élaborer des formations, des panneaux d'information et des bulletins mensuels, ainsi que tout autre type de matériel demandé.
- Effectuer des inspections quotidiennes pour identifier les non-conformités, signaler via les canaux appropriés et vérifier que les normes établies par Marriott Global Food Safety sont respectées, en se basant sur une liste de contrôle de 43 points.
- S'assurer que les Normes de Marque sont respectées quotidiennement et en avoir une connaissance approfondie, ainsi que du Code Alimentaire de Dubaï.
- Étant donné que la propreté et la désinfection sont essentielles, ces aspects doivent être vérifiés quotidiennement et communiqués au département de la plonge.
- Réaliser des inspections régulières de toutes les zones de manipulation des aliments, des bars, des garde-manger, des chambres, des commodités, des vestiaires du personnel, ainsi que du comportement du personnel pouvant poser un problème de sécurité alimentaire, en garantissant la conformité aux normes d'assainissement et en discutant des observations avec le personnel concerné ou avec les chefs de département/superviseurs pour des actions correctives.
- Veiller à ce que les manipulateurs de nourriture malades, en particulier le personnel de cuisine et de restauration, ne préparent ni ne manipulent les aliments.
- Inspecter, analyser et identifier les risques de sécurité alimentaire lors de l'achat, de la réception, du stockage et de la préparation des aliments et des boissons.
- Effectuer des échantillonnages alimentaires mensuels.
- Assister dans la collecte et l'enregistrement des plaintes des clients et des fournisseurs.
- Réaliser des essais pratiques selon les besoins et les plannings établis.
- Effectuer des tâches administratives selon les besoins.
- Fournir des retours au Responsable Adjoint et au Directeur de la Sécurité Alimentaire et des Services Environnementaux sur toutes les questions relatives à l'hygiène quotidienne et aux problèmes de sécurité alimentaire à long terme.
- Suivre les procédures d'hygiène personnelle appropriées pour garantir que les aliments servis aux clients sont sûrs à la consommation, y compris la désinfection des mains avant de manipuler les aliments et le port de couvre-chefs et de chaussures appropriées.
- Respecter et garantir la conformité aux politiques et procédures de sécurité alimentaire et de manipulation, telles que la rotation des produits, le principe du premier entré, premier sorti (PEPS), le datage, l'étiquetage, le nettoyage et l'organisation des réfrigérateurs/congélateurs/zones de stockage, ainsi que la conformité à la chaîne du froid, dans tous les départements et zones liés à l'alimentation.
- Vérifier les journaux de cuisine pour la conformité au programme de sécurité alimentaire (par exemple, A1, A2, A3, etc.).
- Maintenir une connaissance à jour des programmes de sécurité alimentaire de l'entreprise dans la zone de responsabilité assignée, ainsi que des normes de la municipalité de Dubaï.
- Suivre les directives et les listes de contrôle liées à la personne responsable.
- Soutenir les initiatives liées à la sécurité alimentaire.
- Signaler toute plainte de client ou autre problème lié à la sécurité alimentaire au Directeur de la Sécurité Alimentaire et des Services Environnementaux ou au Responsable de la Sécurité.
- Vérifier et s'assurer de la justesse de la température des appareils et des aliments à l'aide de thermostats et de thermomètres, y compris le suivi des systèmes de congélation, tels que les ventilateurs, les drains et les portes, pour un fonctionnement adéquat, et signaler les problèmes à la direction des installations.
