Job Description

  • In conjunction with the Provision Master, we analyze F&B stores consumption to optimize ordering of Food and Beverage.
  • We input POs, Invoices, Inventories, and stocks received into our computer system.
  • The successful candidate will maintain accurate and up-to-date records of our food inventory in cooperation with the Provision Master.
  • This role involves carrying out spot-checks on our restaurants and Central Kitchen rotating stock-takes.
  • We require someone to carry out checks on storing operations on the pier.
  • The individual will input all requisitions into our computer system.
  • They will control and ensure that no item leaves the stores without a requisition.
  • Our ideal candidate will account for any stock transfer between onboard locations.
  • They will input physical bar stock counts into our computer system and analyze results highlighting discrepancies.
  • A minimum of one spot check per day will be held on physical inventories held in bars, food and beverage stores, galleys, and cellars.
  • The person responsible for this role will monitor and control tips and bonuses to bar staff.
  • They will perform any other duty as requested by their superiors.
  • The role involves compiling a physical inventory routine for each food & beverage location.
  • The individual will verify the level of inventory at least once per voyage or more as required, daily in the Crew Bar and any other bar with high variances.
  • The successful candidate will prepare a voyage report at the end of each cruise to be signed by the F&B Manager and sent to the shore-side office.
  • Day-to-day supervision and management of these responsibilities will be key aspects of this role.
  • Random audits and reconciliations will be spread over the voyage, and they will work on new computer installations and control procedures.
  • They will tackle systems and financial control problems as they arise.
  • The individual will run end-of-day reports on all bar point-of-sale workstations.
  • They will distribute daily sales analysis reports as required.
  • The person will feed figures into spreadsheets to carry out control functions.
  • They will review 'undefined' accounts.
  • Tackling computer problems as they occur will also be part of this role.
