Your Day-to-Day Responsibilities

As a Chef de Partie – Butcher, you will be responsible for handling all meat, poultry, and seafood preparation, ensuring high-quality cuts and portioning in line with kitchen standards. This role requires expertise in butchery techniques, proper storage, and food safety, as well as collaboration with chefs to ensure a smooth kitchen operation.


Main Responsibilities

  • Select, cut, trim, debone, and portion meats, poultry, and seafood according to menu requirements.
  • Ensure proper storage, thawing, and handling of meat and seafood to maintain freshness and quality.
  • Minimize waste by utilizing every part of the meat.
  • Maintain proper storage and temperature control of all meat products to ensure food safety.
  • Monitor inventory levels and assist with ordering meats and seafood based on kitchen needs.
  • Follow strict hygiene and sanitation procedures to prevent cross-contamination.
  • Evaluate and adhere to HACCP (Hazard Analysis Critical Control Point) and other food safety regulations.
