About the Role

We are seeking a highly skilled and experienced Senior Dessert Production Specialist to join our team and oversee the daily operations of the Pastry Shop.

Main Responsibilities:
  • Supervise the production process to ensure high-quality pastry and dessert offerings for daily menus.
  • Assist in preparing production forecasts and tracking leftovers to minimize waste and optimize food costs.
  • Design and implement visually appealing pastry displays in various buffets.
  • Maintain knowledge of relevant health and safety regulations, ensuring compliance at all times.
  • Clean the Pastry Shop according to schedule, minimizing equipment damage and maintaining a safe working environment.
  • Prepare the pastry galley for inspections by senior management or external auditors.
  • Procure necessary items from main stores and transport them to the pastry shop efficiently.
  • Evaluate recipes and yields against company standards, suggesting improvements as needed.
  • Support the Executive Chef with daily pastry consumption reports as requested.
  • Be aware of and/or acquire knowledge to assist guests and crew members with inquiries effectively.
Requirements:
  • A minimum of three years' experience as a Pastry Cook in an upscale hotel, resort, cruise ship, or convention banqueting service (shipboard experience preferred).
  • Strong knowledge of proper cleaning techniques, requirements, and equipment usage.
  • A high school diploma or equivalent educational background is required.
