Job Title: Head Butcher - Meat Department Manager

Job Summary:

We are seeking a highly skilled and experienced Head Butcher to join our team at AccorHotel. As a key member of our kitchen staff, you will be responsible for overseeing the daily operations of the meat department, ensuring that our guests receive the highest quality meat products.

Key Responsibilities:

• Meat Department Management: Oversee the daily operations of the meat department, including inventory management, ordering, and stock control.
• Quality Control: Ensure that all meat products meet the highest standards of quality, freshness, and presentation.
• Team Leadership: Supervise and train a team of butchers to ensure that they are working efficiently and effectively.
• Customer Service: Provide exceptional customer service to our guests, responding to their needs and preferences.
• Inventory Management: Manage inventory levels, ordering, and stock control to minimize waste and optimize profitability.
• Cost Control: Monitor and control costs associated with meat purchases, labor, and other expenses.
• Food Safety and Hygiene: Ensure that all food safety and hygiene standards are met, including HACCP and other regulatory requirements.
• Training and Development: Identify training needs and provide training and development opportunities for team members.
• Performance Management: Conduct regular performance reviews and provide feedback to team members.
• Collaboration: Work closely with other departments, including purchasing, engineering, and hygiene, to ensure seamless operations.

Requirements:

• Experience: Minimum 3 years of experience in a similar role, preferably in a hotel or restaurant environment.
• Education: High school diploma or equivalent required; culinary degree or certification preferred.
• Skills: Excellent leadership and communication skills; ability to work in a fast-paced environment; strong attention to detail and organizational skills.
