Key Responsibilities:

- Lead the sushi kitchen with creativity, precision, and passion, overseeing all aspects of sushi preparation, including sourcing ingredients, crafting menu items, and ensuring impeccable presentation.
- Develop and execute innovative sushi menus that showcase the freshest ingredients and reflect seasonal flavours while maintaining authenticity and tradition.
- Train, mentor, and inspire our culinary team, providing guidance on sushi techniques, knife skills, and culinary creativity to foster growth and excellence.
- Collaborate closely with the Executive Chef and culinary team to create harmonious menus that integrate sushi offerings seamlessly with other culinary specialties.
- Ensure compliance with all health, safety, and sanitation regulations, maintaining a clean and organized sushi kitchen at all times.
- Stay abreast of industry trends, sourcing the finest ingredients, and exploring new techniques to continuously elevate our sushi offerings and enhance the dining experience.

**Requirements**:

- Proven experience as an Executive Sushi Chef or Head Sushi Chef in a high-end sushi restaurant or luxury hotel environment.
- Extensive knowledge of traditional Japanese sushi techniques, including sushi rice preparation, fish cutting, and sushi presentation.
- Creative flair and culinary vision to develop innovative sushi menus that push the boundaries of traditional sushi while maintaining authenticity and quality.
- Strong leadership abilities with a passion for mentoring and developing culinary talent.
- Exceptional organizational skills and attention to detail, with the ability to manage multiple responsibilities effectively in a fast-paced environment.
- Excellent communication and interpersonal skills, with the ability to collaborate effectively with the culinary team and other departments.
- Knowledge of health, safety, and sanitation regulations and best practices in sushi preparation and kitchen operations.
