**Job Title**: Chief Steward
**Job Summary**:
The Chief Steward is responsible for overseeing the stewarding operations in the kitchen, ensuring the cleanliness, sanitation, and organization of all kitchen areas, equipment, and utensils. This role involves managing a team of stewards, coordinating cleaning schedules, and maintaining inventory levels for cleaning supplies. The Chief Steward plays a crucial role in supporting the culinary and food & beverage teams by ensuring that all hygiene and safety standards are met.
**Key Responsibilities**:
**Leadership and Team Management**:
1. Supervise, train, and mentor the stewarding team, ensuring all tasks are completed efficiently and to the highest standards.
2. Assign daily duties to stewards, monitoring their performance and providing feedback as needed.
3. Conduct regular meetings with the stewarding team to discuss operational issues, safety procedures, and updates.
**Sanitation and Hygiene**:
1. Ensure all kitchen areas, including floors, walls, and ceilings, are kept clean and sanitized according to health and safety standards.
2. Oversee the cleaning and sanitation of all kitchen equipment, utensils, and dishes, ensuring they are ready for use.
3. Implement and maintain proper waste disposal practices, including recycling and composting, to ensure a clean and eco-friendly environment.
**Inventory Management**:
1. Maintain and manage inventory levels of cleaning supplies, chemicals, and kitchen equipment.
2. Coordinate with the purchasing department to order necessary supplies and ensure timely deliveries.
3. Monitor the usage of cleaning supplies to avoid wastage and manage costs effectively.
**Equipment Maintenance**:
1. Ensure that all kitchen equipment, including dishwashers, ovens, and refrigeration units, is cleaned and maintained regularly.
2. Report any equipment malfunctions or damage to the maintenance department and follow up on repairs.
3. Work with the culinary team to ensure that equipment is properly handled and stored after use.
**Safety Compliance**:
1. Ensure that all stewarding staff are trained in and comply with safety regulations, including the proper use of cleaning chemicals and equipment.
2. Conduct regular safety inspections of the kitchen and storage areas, addressing any hazards immediately.
3. Maintain up-to-date records of safety training and certifications for all stewarding staff.
**Collaboration with Culinary and Food & Beverage Teams**:
1. Coordinate with chefs and food & beverage managers to ensure that the kitchen is fully equipped and ready for service.
2. Support kitchen operations by ensuring that all utensils, plates, and glassware are cleaned and available when needed.
3. Assist in setting up and breaking down buffet stations, banquet events, and other food service areas.
**Administrative Duties**:
1. Prepare and manage the stewarding department’s budget, controlling costs and optimizing resource allocation.
2. Keep accurate records of cleaning schedules, inventory levels, and equipment maintenance logs.
3. Participate in departmental meetings and contribute to the overall improvement of kitchen operations.
**Event Support**:
1. Assist in the planning and execution of special events, ensuring that all kitchen and stewarding needs are met.
2. Coordinate with the banquet team to ensure that equipment and supplies are available for events.
3. Manage the setup and breakdown of food service areas for events, ensuring a smooth operation.
**Problem-Solving**:
1. Address and resolve any issues related to kitchen cleanliness, equipment functionality, or staff performance.
2. Work proactively to identify areas for improvement in stewarding operations and implement solutions.
3. Handle any emergencies, such as spills, equipment breakdowns, or health code violations, with urgency and efficiency.
**Qualifications**:
1. Proven experience as a Chief Steward, Stewarding Supervisor, or in a similar role in a large kitchen or hotel environment.
2. Strong knowledge of kitchen sanitation, hygiene, and safety standards.
3. Excellent leadership and team management skills, with the ability to motivate and train staff.
4. Good organizational and time management skills, with the ability to prioritize tasks and manage multiple responsibilities.
5. Strong communication skills, both verbal and written, to effectively coordinate with team members and other departments.
6. Basic knowledge of inventory management and cost control.
7. Flexibility to work various shifts, including early mornings, evenings, weekends, and holidays.
8. Certification in food safety, hygiene, or a related field is a plus.
