Cumplir con todas las reglas y requisitos relacionados con la sanitización y salud. Reunirse con el Chef para revisar asignaciones, anticipar níveles de trabajo, cambios y otra información. Preparar ingredientes para cocinar, incluyendo preparar porciones, cortar y almacenar alimentos para dejarlos listos para servir. Continuar las tareas de preparación entre servicios de comidas. Preparar y cocinar los alimentos de acuerdo con las recetas, normas de calidad, normas de presentación y lista de verificación de preparación de alimentos. Vigilar la calidad de los alimentos mientras los prepara. Pesar, medir y mezclar los ingredientes de acuerdo con las recetas y criterio personal. Probar los alimentos para determinar si se han cocinado lo suficientemente usando métodos como degustar, oler o pincharlos con utensilios. Asegurarse de que se sirvan los alimentos con las porciones, arreglos y acompañamientos apropiados. Servir los alimentos en porciones apropiadas en los receptáculos apropiados. Anticipar y comunicar la asistencia necesaria durante los períodos de mucha actividad. Tener en cuenta los costos de los alimentos y el trabajo, vigilar los níveles de alimentos para minimizar el desperdicio, llevar un control para no sobrepasar los costos previstos para los alimentos e identificar casos en los que se puedan agotar los productos. Informar al Chef si hay un exceso de alimentos que puedan usarse en platos especiales del día o en otra parte. Dirigir y ayudar a los camareros para maximizar la eficacia de la limpieza. Ofrecer nuevas ideas y encargarse del departamento en ausencia del Chef y Sous Chef. Utilizar los utensilios de cocina de forma segura y apropiada. Lavar y desinfectar el área de la cocina, las mesas, los utensilios, los cuchillos y el equipo. Verificar y asegurarse de que la temperatura de los electrodomésticos y los alimentos sea la correcta.
