**Job Summary**:
**Key Responsibilities**:
- **Ice Cream Production**:
- Develop and execute a wide range of artisanal ice creams, gelatos, sorbets, and frozen desserts.
- Experiment with and refine recipes to create unique flavor combinations.
- Manage the production process, including churning, storage, and maintaining optimal texture and flavor.
- **Chocolate Creation**:
- Design and produce high-quality chocolates, including truffles, pralines, bars, and molded confections.
- Explore and incorporate various fillings, inclusions, and coatings to elevate the chocolate offerings.
- **Recipe Development and Innovation**:
- Stay up-to-date on dessert trends and incorporate them into new menu items.
- Collaborate with the team to design seasonal collections and limited-edition offerings.
- Maintain accurate recipes and production notes for consistency and scalability.
- **Quality Control**:
- Ensure all products meet company standards for taste, presentation, and quality.
- Monitor freshness and maintain proper storage of ingredients and finished products.
- Adhere to food safety and hygiene standards at all times.
- **Team Collaboration and Training**:
- Work closely with kitchen staff to coordinate production schedules and ensure efficiency.
- Train junior staff or assistants in techniques specific to ice cream and chocolate making.
- Provide input on equipment, tools, and ingredient procurement.
- **Customer Engagement (if applicable)**:
- Participate in tastings, events, or workshops to showcase your creations.
- Engage with customers to gather feedback and inspire loyalty to the brand.
**Requirements**:
- Proven experience as a Pastry Chef, with a strong focus on ice cream and chocolate making.
- In-depth knowledge of ingredient properties, flavor pairing, and dessert preparation techniques.
- Proficiency in chocolate tempering and advanced dessert techniques.
- Creativity, precision, and an eye for detail in both flavor and presentation.
- Strong organizational skills and the ability to manage multiple tasks efficiently.
- Familiarity with food safety standards and practices.
- Culinary degree or certification in pastry arts is preferred but not mandatory with significant experience.
**Preferred Qualifications**:
- Experience in developing vegan or allergen-friendly desserts.
- Knowledge of international dessert trends and techniques.
- Prior experience working in a high-volume production environment.
