Job Responsibilities:
- Organize together with de Chef de Partie the shift on his/her section with regards to mise-en-place production and its service.
- Prepare a variety of baked goods, including bread, pastries, cakes, and desserts, following established recipes and quality standards.
- Operate baking equipment such as mixers, ovens, proofers, and sheeters efficiently and safely.
- Monitor oven temperatures and baking times to ensure proper cooking and achieve desired texture and color.
- Supervise and train junior kitchen staff, including commis bakers and pastry assistants, ensuring adherence to recipes, techniques, and hygiene standards.
- Maintain cleanliness and organization in the bakery area, including work surfaces, equipment, and storage spaces, in accordance with food safety regulations.
- Collaborate with other kitchen departments to coordinate food preparation and ensure timely service during peak hours.
- Uphold high standards of food quality, presentation, and consistency, following established plating and garnishing guidelines.
