We, at Dreamy Delights by Sidra Cafe do not use any pre-mixes in our kitchen. Our Head Chef must be able to develop and implement delicious recipes from scratch using fresh ingredients. We want someone who can prepare perfect Croissants, Breads, Buns, Danish Pastry, Cakes, cookies, brownies, pies, and multiple desserts from scratch. In addition to that the head chef should be able to monitor and control the cost of operations. He should be able to suggest innovative ideas for seasonal offerings and special occasions.
Head Chef should be able to monitor stocks. Prepare reports of existing stock, order inventory, plan ahead regarding stock requirements. Minimize wastage and introduce cost effective strategies. He should be able to control production of cakes and desserts with proper rotation and maintain the highest cleanliness and hygiene standard in the kitchen.
We also host events in our cafe where we require to prepare snacks like Burger, Pizzas, sandwiches, quiche, salads, etc. So good knowledge and presentation of hot kitchen items is a must.
Head Pastry Chef Duties and Responsibilities:
- Manages all day-to-day operations of the kitchen
- Monitor stocks and make appropriate orders within budget.
- Able to develop, designs, or creates new ideas and items for Pastry Kitchen
- Train staff to be fully independent in preparing the standard desserts and cafe items.
- Make sure clients are served efficiently, with proper presentation of dishes and wait time is minimized.
- Ensure excellent quality throughout the dessert offerings.
- Should work with the manager on ideas to offer during promotions, events and special occasions
- Coordinates activities of staff engaged in food preparation.
- Supervise and coordinate all pastry and dessert preparation and plan for the upcoming orders
- Checks the quality of raw and cooked food products to ensure that standards are met.
- Check quality of material and condition of equipment and devices used for cooking.
- Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to supervisor immediately.
- Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with co-workers efficiently and effectively
- Ensures compliance with all applicable laws and regulations, and food hygiene and Health and Safety standards
- Encourages and builds mutual trust, respect, and cooperation among team members.
- Guide and motivate pastry assistants and bakers to work more efficiently.
- Maintain a lean and orderly cooking station and adhere to health and safety standards.
- Ensuring Culinary Standards and Responsibilities are met for Pastry Team.
Prerequisites:
- Good knowledge of different types of pastry, dessert, cookies, cake decorating, Bread, Croissants, Danish Pastry, Snacks.
- Posses professional disposition with good communication and interpersonal skills.
- Ability to work a variety of shifts including weekends, days, afternoons and evenings.
- Positive attitude is a Must.
- Should have minimum 3 years of experience in a commanding position.
**Salary**: AED4,500.00 - AED6,500.00 per month
