Roles and responsibilities
  • Work with the Head Chef& Sous Chef, support the development of the culinaryconcept, establish a compelling proposition, and then work with keystakeholders to define the product, including quality andcost.
  • Support the management of the Kitchensection regarding supervision of food preparation and serviceaccording to set standards, customer satisfaction and high level ofsales in line with company policies andregulations.
  • Train the kitchen team on thestories and presentation of food.
  • Brand& Strategic Leadership
  • Ensure recipesare followed accurate, support keep pickup charts and recipe cardsup to date.
  • Ensure the product offer can bedelivered effectively within the existing F&B operationsand create appropriate development plans with the Sous Chef andHead Chef.
  • Maintain excellent communicationswith operational Chefs and other relevant services teams on menudevelopment issues. Working in cohesion to train, implement and'land' all new menus/recipes andconcepts.
  • Ensure daily quality control andconsistency checks to make sure the quality is up to expectedstandards
  • You will be active on Workplace,gathering all needed information and encourage the team to be awareof all happenings around the hotel and are capable to use thisinformation daily.
  • PeopleManagement
  • Attend and conduct training anddevelopment programs as and when required, improving performance,and promoting the development of theteam.
  • You'll communicate effectivelywith subordinates and immediatesuperiors.
  • You'll be capable ofexpressing clearly, listening, and absorbinginformation.
  • You will participate in specialactivities to develop and increase team morale andspirit.
  • You will be leading by example andactively working on a section in service teams, improving theteam's capabilities and ensuring quality on allsections.
  • Knows and understand the JobDescriptions and responsibilities of all culinary staff in theoutlet or involved in theoutlet.
  • You'll be attending dailybriefings and be keeping communicationtransparent.
  • Coordinating the junior culinaryteam in a timely manner and setting deadlines andgoals.
  • You'll manage time effectively,by meeting deadlines on time.
  • You'll becoaching and counselling subordinateseffectively.
  • You'll ensure thatsubordinates personal hygiene is always up to the higheststandard
  • You'll evaluate objectivelythe performance of Kitchen staff and conduct a quarterlyappraisal.
  • Conduct daily line checks andquality control through the whole kitchen team and foodoptions.
  • Enforce disciplinary measures whereneeded to ensure quality and brand standards arefollowed.
  • You'll assist with the weeklyduty roaster as well as vacation planning of subordinatesthroughout the year.
  • OperationsManagement
  • Responsible for the operation, andcoordination of the Kitchen in absence of the Sous Chef and HeadChef and taking the lead in dailyoperations.
  • You'll implement all thefood policies and procedures in the kitchen and ensurescompliance.
  • Responsible for delivering highestquality without compromising it.
  • Responsiblefor ensuring daily storeroom requisitions, stock control andsufficient supplies during kitchen operation are rotated and usedin a FIFO system.
  • Responsible for the propermaintenance and good working order of allequipment.
  • Responsible for establishing andmaintaining high sanitation standards in the Kitchen, according toHACCP guidelines.
  • Responsible for ensuringenough operating equipment and supplies forproduction.
  • You'll follow the technicalguidelines and preparation processes for the letter, avoiding allwastage.
  • You'll keep information flowand ordering procedures and requirements in compliance with theSous Chef and Head Chef in Charge for the ordering procedures orhis substitute in charge.
  • You'll ensureDubai Municipality Food Control Section Regulations are adhered toin detail, that Stewarding records are up to date and filled incorrectly.
  • You'll follow qualitystandards and compliance.
  • You'llcontrol Food Stock in regard of freshness and expiry date. Orderfood daily as required using Future Log, ensuring that the foodcost is kept in line.
  • You'll operatewithin the set food cost for the respective Area /Outlet
  • You'll direct the activities offood quality, productivity, and creativity to maintain and improvestandards according to menus, a la carte, promotions, and specialrequirement.
  • You'll carry out a firmand fair employee treatmentpolicy.
  • You'll oversee and manage foodstocks, ordering and quality of products used as perstandards.
  • You'll be responsible forensuring the Kitchen is covered with management staff duringoperation.
  • Being able to operate the allocatedsection alone with delivering highestquality.
  • Hygiene &Safety
  • You'll ensures that theworkplace and storage areas remain clean and tidy, and the safetyof consumable goods by always respecting HACCPregulations.
