Stewarding Manager

- To ensure that breakages areadministrated in order to provide constant feedback to theoperation as a tool to reduce breakages andlosses.
- To strictly adhere to the establishedoperating expenses and ensure that all costs arecontrolled.
- To ensure an effective payrollcontrol through a flexible work force and maintain a closecooperation with other Food & Beverageoutlets.
- To participate in the formulation ofthe Annual Operating Budget operating cost, operating equipment andFF&E requirements in line with the compilation of theAnnual Business Plan.
- To ensure that theStewarding Department is managed, providing a courteous,professional, efficient and flexible service at alltimes.
- To assist and coach in the operation andbe visible during peak times or major events having a hands onapproach.
- To implement a flexible schedulingbased on business patterns.
- To have a fullworking knowledge and capability to supervise, correct anddemonstrate all duties and tasks in the assigned place ofwork.
- To assign responsibilities tosubordinates, implementing multi tasking principle and to checktheir performance periodically.
- To establishand strictly control inventories and to the par stocks in theoperation for all operating equipments, Food & Beverage,FF&E items and to ensure that the outlet is adequatelyequipped.
- To conduct monthly inventory checkson all operating equipments and supplies.
- Tocarry out bi-yearly, yearly inventory of operating equipment aswell as conducting monthly par stock checks.
- Toorganize in a proper way all equipment storage with fullcodification for all labeled items
- To controlthe requisitions, storage and careful use of all operatingequipments and supplies.
- To conduct dailypre-shift briefings to ambassadors on preparation, service andhotel events.
- To liaise with the Kitchen andFood & Beverage Department on daily operations and qualitycontrol.
- To supervise night cleaning inkitchen, front (Open Kitchen) and heart-of-house food and beverageareas.
- To ensure that heart-of-house cleaningschedules and garbage runs are strictly adhered to and areas arecleaned according to the establishedstandards.
- To ensure that the back of the Houseareas are kept clean and organized.
- To have athorough understanding and knowledge of all Food & Beverageequipment needs and network with other hotels to borrow equipmentas and when needed.
- To handle suppliersenquiries in a courteous and efficientmanner.
- To be demanding and critical when itcomes to service and hygiene standards in conjunction with thehygiene Manager.
- To ensure that the Stewardingteam complements the Outlet team in projecting a warm, professionaland welcome image.
- To submit to Food &Beverage Office the following: Monthly Outlet Report MonthlyObjective Review, Monthly Breakage and Loss Report, ChemicalConsumption Report, Monthly Training Report.
- Tomaintain the Daily Log Book.
- To report"Lost & Found"items.
- To attend weekly Food & BeverageMeeting and Daily Operations Meeting.
- Toprovide the Purchase Manager with detailed Product and PurchaseSpecifications for items used in the outlet.
- Toliaise and organize with Housekeeping Department that theestablished cleaning schedules are strictly adhered to andcoordinated between the two departments.
- Tocoordinate all Repair and Maintenance and issue repair andmaintenance job orders to ensure the proper maintenance of theoutlet.
- To ensure that all operating equipmentsprovided to the departments are kept in goodcondition.
- Must be an example of the SofitelValues, Brand Standards, and a champion of appearance and hygieneguidelines.
- Implements guidelines, policies andprocedures for those operating departments according to SofitelGuidelines & Standards.
- Must apply theSofitel Food & Beverage rituals.
- Torespond to any changes in the Engineering function as dictated bythe industry, company and hotel.
