Un Chef de Partie es responsable de supervisar al personal y asegurar un alto nivel de preparación de los alimentos para que los huéspedes y miembros disfruten de una excelente experiencia y, a la vez, asiste en los controles de costos de los alimentos.
¿Qué voy a estar haciendo?
Como Chef de Partie, serà responsable de supervisar al personal y asegurar un alto nivel de preparación de los alimentos para que los huéspedes y miembros disfruten de una excelente experiencia. Un Chef de Partie también deberà asistir en los controles de costos de los alimentos. EspecÃficamente, serà responsable de realizar las siguientes tareas de acuerdo con los estÃndares mÃs altos:
- Asegurar que la preparación de todos los alimentos cumpla con los estÃndares
- Preparar y presentar comidas de alta calidad
- Supervisar al personal
- Mantener todas las Ãreas de trabajo limpias y ordenadas y evitar la contaminación cruzada
- Preparar el mise-en-place para todos los menús pertinentes
- Asistir para alcanzar resultados positivos ante las consultas de los huéspedes de manera efectiva y oportuna
- Asegurar que los alimentos sean de buena calidad y se almacenen correctamente
- Asistir en el control de costos, en la mejora de los mÃrgenes de ganancia bruta y en otros objetivos departamentales y financieros
- Asistir a otros departamentos cuando sea necesario y mantener una buena relación laboral
- Asistir al chef principal/Sous Chef en la capacitación de todo el personal según los procedimientos de la compañÃa
- Informar cuestiones relacionadas con el mantenimiento, la higiene y los riesgos
- Cumplir con las normas referidas a la seguridad del hotel, la protección contra incendios y la legislación en materia de salud, seguridad y alimentos
- Tener conciencia ambiental
Un Chef de Partie siempre trabaja para nuestros huéspedes y con otros miembros del equipo. Para desempeñarse con éxito en esta posición, debe mantener la actitud, la conducta, las aptitudes y los valores mencionados a continuación:
- TÃtulo de técnico de formación profesional de nivel 3
- Certificado bÃsico de higiene de los alimentos
- Experiencia en supervisión
- Actitud positiva
- Buen nivel de comunicación
- Habilidad para trabajar bajo presión
- Habilidad para trabajar de manera individual o en equipo
Para ocupar esta posición, es favorable demostrar las siguientes capacidades y distinciones:
- Experiencia en una posición de cocina similar
- Certificado intermedio de higiene de los alimentos
- Conocimiento de las tendencias actuales del mercado
